The way your house smells when you have cookies packed with cinnamon buttery goodness is oh so nostalgic. Cold winter days stuck in the house in Wisconsin led to baking anything and everything that we could make. Warm cookies wafting on the cold air led friends and neighbors to check out what was going on. These cookies were always a crowd favorite. Enjoyed with a glass of eggnog or warmed milk! Click HERE to download and print the recipe or simply follow along! As seen on Nashville’s Talk of the Town and in Nashville’s EDIBLE Magazine!

Something Sweet, LLC’s Snickerdoodle Cookie

What’s better than a warm buttery, cinnamon sugary cookie with a soft center and crunchy edge. We think there’s probably nothing. Unless you dunk it in a big tall glass of eggnog! Snickerdoodles remind you of a time when going to visit Granny was the ultimate destination and you’d walk into her house and smell the delicious aroma of warm cinnamon filling the air.

Here’s to Granny and creating those memories for generations to come!

PREHEAT OVEN to 350 Degrees while prepping Ingredients!

Ingredients:

1 Cup Butter

¾ Cup Sugar

½ Cup Dark Brown Sugar

1 Egg & 1 Egg Yolk

1 Tablespoon Vanilla

2 ¾ Cup Flour

1 Teaspoon Baking Soda

1 Teaspoon Cream of Tartar

½ Teaspoon Salt

½ Teaspoon Ground Cinnamon

¼ Teaspoon Corn Starch

Cinnamon Sugar Topping:

½ Cup Sugar

1 ½ Tablespoon Cinnamon

Instructions:

1. Line your baking sheet with parchment paper (wax paper) and set it aside. (Note: Do NOT grease pan)

2. In a small bowl, mix cinnamon and sugar for topping together until thoroughly combined. Split ¼ cup of mixture into another small bowl. Set both aside.

3. In a medium bowl, sift together flour, baking soda, cream of tartar, cinnamon, salt and corn starch.

4. In the bowl of your mixer (using the paddle attachment) cream butter and sugars together until light and fluffy. This should take about 3 minutes. Scrape the sides of your bowl down with a rubber spatula or spoon. Making sure to scrape the bottom and turn it over. Beat in egg and egg yolk and vanilla until thoroughly incorporated. Again, scrape down the bowl.

5. In two parts, slowly add flour mixture into butter mixture until just combined. Be careful not to over mix dough. Let dough rest 5 minutes.

6. Use cookie scoop to scoop out 1-inch balls of cookie dough. Using one of the topping bowls, roll balls of cookie dough into the cinnamon sugar mixture until well coated. Place coated dough balls on prepared cookie sheet 2-inches apart. Bake for 10-13 minutes (Depending on your oven) or just until the bottom edges are a nice golden brown.

7. While cookies are still warm, using reserved cinnamon sugar, sprinkle extra topping across the top of cookies. This gives them a little extra crunch and pretty, sparkly fun.

7. The center of the cookie will be soft-allow cookies to rest on sheet for about 5 minutes. They will continue to bake on warm sheet and set the rest of the way. Remove onto wire rack to cool completely (or eat!)

Store in an airtight container if there are any left!

Enjoy,

I learned how to make all kinds of bundt and pound cakes from my Great Granny. She taught me a lot of what I know. This is a 7-Up Pound cake that I learned I just added a little cranberry glaze o dress it up and make it festive for the holidays and use all that extra canned cranberry sauce left over from Thanksgiving! It’s fun and pretty and delicious! I added a few fresh cranberries on top as a garnish. Dress it up the way you’d like!

BONUS PRO TIP! My Bonus tip is to remember to have fun with it. Food is fun and food is art.

Follow along online or print out your copy of the recipe HERE!

Great Granny’s 7-up Pound Cake with Cranberry 7-Up Glaze
3 Sticks Unsalted Butter, Room Temp
3 Cups Granulated White Sugar
5 Large Eggs, Room Temp
3 Cups Cake Flour
1 Teaspoon Salt
½ Cup 7-Up
1 Tablespoon Lemon Extract

Cranberry Glaze
1 ½ Cup Powdered Sugar
3 Tablespoons 7-Up
½ Teaspoon Lemon Extract
4 0z Can Cranberry Sauce

Instructions
Preheat Oven to 325 Degrees.
Grease and flour a 6 cup Bundt pan (or use baking spray).

Beat Butter until light and fluffy, about two minutes. Add in Sugar and salt, cream together for five minutes.

Add eggs one at a time, beat well after each addition, making sure to scrape down bowl after each new addition.

Add flour in two batches, careful not to over mix.

Mix Lemon extract into 7-Up and then fold carefully into cake batter.

Carefully pour cake batter into prepared pan evenly. Bake for 75-85 minutes or until toothpick inserted into middle of cake comes out clean. (if browning on top too quickly, cover cake with a piece of aluminum foil until fully baked through.

Once out of the oven, let rest for 10 minutes and then flip onto cake plate.

Glaze Instructions
1. In a small bowl, whisk half of the can of cranberry sauce until it liquifies.
2. Whisk in the rest of the ingredients and beat together well. Glaze should be a pourable consistency. If too thick, ad more 7-Up a tablespoonful at a time. If to runny, add a tablespoon of powdered sugar. Carefully pour over the top of cooled cake.

There are some key tips to help you in the kitchen. When baking the knowledge of these things come in handy to help you have the best experience possible. There are small things that you can do to ensure that all your ingredients are ready to be used! Download and print your copy to keep it on hand in your kitchen HERE!

EGGS In a hurry? Recipe calls for eggs at room temperature? It’s ok, put the eggs in a bowl large enough to fit all of them. Run the hot water in your sink until its nice and hot. Run some water into the bowl with the eggs and let them stand for 5 minutes. Voila! Eggs at room temp!

2. BUTTER Butter supposed to be softened, but you forgot to take it out, huh? No worries. Stick the butter, still wrapped in the microwave on a microwave safe plate. zap it on low in 10 second increments. Be careful not to melt it! The recipe wants soft, not melted butter, if you melt it you will not get your desired texture.

3. BUTTERMILK Don’t have any buttermilk on hand and need it now? Take a tablespoon of lemon juice (my favorite, when I run out) or white vinegar and add it to one cup of milk. Let it stand 10 minutes. Stir before adding it to your recipe.

4. MEASURE TOGETHER Most people (especially novice bakers) really don’t like to pre measure ingredients. Trust me this is one of the best things you can do for yourself. Sift together your dry ingredients (ie flour, baking soda, baking powder, salt, etc) it’ll make the rest of your experience so much easier and you won’t forget anything!!!

5. CAKE FLOUR Don’t bake cakes often enough to buy a whole box of cake flour? No problem. Replace two tablespoons of your all purpose flour with two tablespoons of cornstarch for every cup of flour needed. Whisk it together very well before adding into your recipe!!

6. THE OVEN Don’t for get to turn the oven on to the specified temperature of your recipe before you begin. Preheating the oven is crucial to some baked items-especially small thing like cookies, that need a nice hot oven.

No matter how far along you are in your sophistication as an amateur astronomer, there is always one fundamental moment that we all go back to. That is that very first moment that we went out where you could really see the cosmos well and you took in the night sky. For city dwellers, this is a revelation as profound as if we discovered aliens living among us. Most of us have no idea the vast panorama of lights that dot a clear night sky when there are no city lights to interfere with the view.

It seems from the moment you begin to take your love of astronomy seriously, the thing that is on your mind is what kind of telescope will you get. And there is no question, investing in a good telescope can really enhance your enjoyment of your new passion in astronomy.

Rodney Cannon

In the history of modern astronomy, there is probably no one greater leap forward than the building and launch of the space telescope known as the Hubble. While NASA has had many ups and downs, the launch and continued operation of the Hubble space telescope probably ranks next to the moon landings and the development of the Space Shuttle as one of the greatest space exploration accomplishments of the last hundred years.

That’s right. There are 10 mainstays in the kitchen of all bakers everywhere. They are the foundation of most recipes. There will be other posts about what intermediate and advanced bakers keep in their pantries later. You will probably be surprised about how many items listed here you may already have. Baking is an easy and fun way to pass the time and dare I say delicious? So, let’s take a look at what you have on those shelves and get baking!

Are you ready for this list? Ok, here it is.

All Purpose Flour

Baking Soda

Corn Starch

Salt

Eggs

Unsalted Butter

Vanilla Extract

White Granulated Sugar

Dark Brown Sugar

Milk

Did you go take a look at your shelves? Did you do a mental ah ha? You probably have at least six of these things on hand don’t you? Baking really isn’t all that difficult. Now we just have to weed out what’s beyond the expiration dates! Things like baking soda and baking powder can get old and the reason why you need them in your recipe won’t be active anymore. Baking is a big chemistry experiment-leave out the baking powder and your cake will be hard and flat-same if it’s too old, it won’t work. So check those dates!

It’s time to have fun and get in there and do something spectacular!
